1. The Ball Faucet

As the round shape of the faucet handle suggests, the control inside this faucet is a ball made of brass, with three ports through which water flows when the ports are centered over seats in the faucet body. Under the shank of the handle is a setscrew that must be loosened with a hex wrench to get the handle off. Do not take the screw all the way out; it is easily lost.

2. The Ceramic-Disk Cartridge Faucet

The screw that releases this handle is not beneath the decorative knob where you might expect to find it. Raise the lever as high as it can go; recessed under it is a small setscrew that releases the handle. But the control unit is now only partially uncovered; you must also remove the chrome body cover. To do this, disconnect the thumbscrew holding the pop-up drain rod beneath the sink (first mark the rod with a felt-tipped pen so you can connect it in the same place). Then unscrew the two Phillips-head screws on the underside of the faucet and lift off the body cover. Newer versions have a slot screw in the handle and a chrome ring that unscrews for easier access to the cartridge.

3. The Tripping-Valve Faucet

So-called because the hot- and cold-water inlets each have a valve that tips when lever is moved forward, allowing water to pass through the spout, this faucet is widely used in kitchens, although it is no longer made. To get into the faucet, turn the spout ring counterclockwise with a wrench (if you use a pipe wrench, be sure the wrench's jaws are covered with electrical tape) until the spout can be lifted off. Then pry up the chrome body cover with a screwdriver and lift it off.

4. The Sleeve-Type Cartridge Faucet

The screw in the cover of the faucet handle illustrated is in plain sight, but in newer models it is hidden by a decorative button the must be pried off. The faucet lever raises to turn the water on and lowers to turn it off. Inside the cover the motion of the lever moves a cartridge up and down to turn the water on and off. An old model of this faucet has a retainer clip in the outside of the handle that must be pulled out for disassembly.

History Of Olive Trees

Olive trees, 'Olea europaea,' are the oldest fruit trees and certainly are one of the most important fruit trees in history. Olive tree culture has been closely connected to the rise and fall of Mediterranean empires and other advanced civilizations throughout the ages. Because olive trees offered wealth and future food supplies to established civilizations, the agricultural nations became stable societies, resulting from a secure expectation from past experience of an uninterrupted food and olive oil supply. This factor was a necessary requirement for population growth and increase. Dependable fruit production and olive oil production means that olive trees must exist in a stable society and a peaceful environment. That stability must extend for many years, since most ancient seedling olive trees required eight or more years before ever producing the first crop of fruit.

Productive orchards of olive trees meant that a foundation of the great empires of Greece and Rome had arisen and developed into complex economic and political forces. It is interesting to note that the historical decline of these empires corresponded to the destruction of their olive tree orchards that reduced the available supplies of olives, olive oil, olive wood, and olive soap. Greek mythology records that Athena, the Goddess of wisdom and peace, struck her magic spear into the Earth, and it turned into an olive tree, thus, the location where the olive tree appeared and grew was named Athens, Greece, in honor of the Goddess, Athena. Local legend tells us that the original olive tree still stands growing after many centuries at the ancient sacred site. Citizens still claim that all Greek olive trees originated from rooted cuttings that were grown from that original olive tree. Homer claimed in his writings that the ancient olive tree growing in Athens was already 10,000 years old. Homer stated that Greek courts sentenced people to death if they destroyed an olive tree. In 775 BC Olympia, Greece, at the site of the ancient Olympic stadium, athletes competed and trained, and winners were triumphantly acclaimed and crowned with a wreath made of olive twigs. Ancient gold coins that were minted in Athens depicted the face of the Goddess, Athena, wearing an olive leaf wreath on her helmet holding a clay vessel of olive oil. The Greeks began olive cultivation in 700 BC.

The sacred lamp that was used in ancient Greek culture for lighting dark rooms at night was fueled by olive oil. Aged olive oil was also used in sacred anointing rituals of the church at weddings and at baptisms. Herodotus wrote in 500 BC, that the growing and exporting of olives and olive oil were so sacred that only virgins and eunuchs were allowed to cultivate orchards of olive trees. The first documented plantings of olive trees may have occurred during the Minoan civilization on the island of Crete and are believed to have been growing around 3500 BC. That civilization predates the discovered Mycenae olive fossils from 1600 BC and later in the Greek empire. Sturt Manning, an archeologist from Cornell University, reported in Live Science Magazine (Apr 28, 2005) that the most devastating volcano in 10,000 years occurred on the Greek Island of Thera, after which the city of Akrotiri was totally buried by the falling ash. The finding of olive wood and olive seed fossils buried near the site has shown through carbon dating that the volcanic eruption occurred between 1660 and 1600 BC and may have contributed to the total destruction of the advanced Minoan civilization (Atlantis) on the isle of Crete and may have led to the formation of the Sahara desert in North Africa after vaporizing the native forests there.

The fragrant flowers of olive trees are small and creamy white, hidden within the thick leaves. Some cultivars will self pollinate, but others will not. The blossoms usually begin appearing in April and can continue for many months. A wild, seedling olive tree normally begins to flower and produce fruit at the age of 8 years. The fruit of the olive tree is a purplish-black when completely ripe, but a few cultivars are green when ripe and some olives turn a color of copper-brown. The size of the olive fruit is variable, even on the same tree, and the shape ranges from round to oval with pointed ends. Some olives can be eaten fresh after sun-drying and the taste is sweet, but most olive cultivars are bitter and must be treated by various chemical solutions before developing into edible olives. If the olives are thinned on the limbs of the trees to 2 or 3 per twig, the ultimate size of the olives will be much larger. The fruit is gathered in mid October and should be processed as soon as possible to prevent fermentation and a decline in quality.

The leaves of olive trees are gray-green and are replaced at 2-3 year intervals during the spring after new growth appears. Pruning yearly and severely is very important to insure continued production. The trees have the unproductive limbs removed, "so that it will be more fruitful" John 15:2. An olive tree can grow to 50 feet with a limb spread of 30 feet, but most growers will keep the tree pruned to 20 feet to assure maximum production. New sprouts and trees will emerge from the olive tree stump roots, even if the trees are cut down. Some olive trees are believed to be over a thousand years old, and most will live to the ripe old age of 500 years.

Olives generally are beaten off trees with poles, harvested mechanically or by shaking the fruit from the trees onto canvas. Most ripening olives are removed from the trees after the majority of the fruit begins to change in color. It is important to squeeze out the olive oil within a day after harvesting or else fermentation or decline in flavor and quality will occur. The olive oil can be consumed or used in cooking immediately after its collection from the press. Olive oils are unique and distinct, each brand of olive oil having its own character, as determined by many factors, like those unique flavor differences found in fine wines. Prepared commercial olive oils can vary greatly in aroma, fruit flavor; whether the taste is, flowery, nutty, delicate, or mild, and the coloring of olive oil is quite variable.

Olive oil produces many health benefits when used in cooking or when poured over salads. The use of olive oil can improve digestion and can benefit heart metabolism through its low content of cholesterol. Experts claim that olive oil consumption will cause a person to grow shiny hair, prevent dandruff, prevent wrinkles, prevent dry skin and acne, strengthen nails, stop muscle aching, lower blood pressure and cancel out the effects of alcohol.

Olive trees can survive droughts and strong winds, and they grow well on well drained soils up to a pH of 8.5 and the trees can tolerate salt water conditions. In Europe, olive trees are normally fertilized every other year with an organic fertilizer. Alternate bearing can be avoided by heavy pruning and generally the trees respond to this very quickly and favorably.

Olive trees should be purchased that have been vegetatively propagated or grafted, because the seed grown trees will revert to a wild type that yields small olives with an insipid taste. Olive trees are more resistant to diseases and insects than any other fruit tree and, therefore, are sprayed less than any other crop.

Even though commercial production of olives in the United States is only 2% of the world market, great interest in growing olives throughout the South has been stimulated by the recent introduction of promising cold hardy olive trees from European hybridizers. Many European immigrants to the United States grow their own olive trees in large pots, that can be moved in and out of the house during seasonal changes.

Creating Perfect Ribs in Your Smoker

In all honesty, I love ribs, but I hate the ribs that the vast majority of establishments serve. Rarely do I get ribs that are done properly as most tend to be either dry and leathery, or soft and mushy. Worst part is, most of these establishments believe that slathering the ribs in a barbecue sauce will bring them back to edible status. Well they are wrong...all it serves to do is add to my frustration by making the meal messy.

While very few, if any, chefs, pit masters, or home-cooks strive to achieve a leathery finish, you do hear the statement that "falling off the bone" is the way to go. While I agree that tender and soft is the ultimate goal, any competition rib that completely falls off the bone is considered completely over-done. A truly perfect rib will adhere to the bone, but fall off when tugged. So my goal with this post is to show you how to achieve a perfect rib at home. The key to good ribs has four components - the rub, the smoke, the heat, and the time. Let's begin with the rub.

The point of using a rub is to develop a flavor base and to create a crust or bark on the ribs. Depending on where you go and whom you talk to, the rubs you have to choose from will reflect regional influences. Some will be hot and spicy, whereas others will be sweeter. I am partial to the Pork and Poultry Blend from Caroline's Rub, which has a more typical Texas flavor - more savory than sweet. I like sweet, don't get me wrong, but I prefer my ribs with more kick than candy, so I let my wood choice add the sweetness. Before applying the rub, the first thing I do is remove the thin skin that covers the back side of the ribs. Using a filet knife, I loosen it from one end, grip it with a paper towel, and then pull it off in one easy motion. While you don't absolutely have to remove this skin, taking a few extra seconds to do so will definitely improve the tenderness of your final outcome. I then rinse and thoroughly dry the ribs, and follow that with a thorough coating of my chosen dry rub. How much you use, will entirely depend upon you. I like a thicker coating, some will prefer less. Next take the coated ribs, and tightly wrap them in plastic wrap, place in the refrigerator and let sit for at least 3 hours. This will give the rub time to penetrate and flavor the ribs. Once the ribs have sat, remove from the refrigerator and allow them to return to room temperature before putting on the smoker.

While the rub adds an immediate kick of flavor, the smoke you choose will work to complement the rub, and add that flavor we all recognize as barbecue. With meats such as pork ribs, I like to kiss the meat with smoke from pecan and cherry woods. The pecan is very similar to hickory in flavor, without the strong bite that can sometimes overpower the lighter meat of the ribs. The addition of cherry wood to the mix serves to work with the pecan to sweeten the meat.

Next factor for success is heat. While there are a thousand ways to cook ribs, many of which yield a truly great product, I prefer slow smoked ribs. Nothing gets my blood pumping like the smell of slow smoked barbecue. I have always found that higher temperatures result in tougher ribs, so my goal is to maintain a low heat level of around 215F to 225F in the smoker (or in your oven at home). This temperature range has yet to fail me. Once I have the smoker where it consistently holds the temperature within this range, I will place the ribs standing in a rib rack, inside for cooking.

Finally, the last factor for creating successful ribs is the cooking time. While many folks insert a thermometer in their ribs to determine doneness, I prefer simply watching the bones. For an average rack of baby back ribs, you can assume a cooking time of between 3 ½ and 4 hours at the temperatures I recommend. The easiest way for me to determine if my ribs are done is to perform two steps, starting with the first at the 3 hour mark - look at the bones. If I have a good ¼ - ½ inch of bone showing, I then perform step two, which is to take a toothpick and insert into the meat. If it slides through will little resistance, like going through butter, the ribs are done. You will want to watch them closely as they will go from done to overdone fairly quick.

Once cooked, I like to let the ribs rest for at least 10 minutes to allow the juiced to evenly distribute themselves within the meat, which will keep things tender and moist. Like I said earlier, I don't like messy, so I tend to serve the ribs dry, with a side of my favorite barbecue sauce for dipping.

Following this method has consistently provided me with ribs that are succulent, moist, and truly satisfying.

Mind that I have only arrived to this conclusion due to the lesser complaints thrown at this company and the higher satisfaction rating they have received. When one is comparing, one should look at the bigger picture.

There really is not that much of a difference. Only that, each have a specific attribute that they excel on. For instance, Simmons offers better spring beds with their beautyrest line. Sealy offers better memory foam and latex technology with their posturepedic line. Serta is just in between.

What you might want to consider is what mattress can provide you with the comfort you are looking for. If you cannot personally test the bed or sleep on top of it for a few minutes, read reviews. This would be a bigger risk since you are not personally testing the mattress out, only taking into consideration the opinions of other people who have closely the same preferences as you are. As for the other essential mattress pointers, Sealy is leading the race. For one thing, there is almost a unanimous agreement that this company has the best customer service. According to some people, Serta has the worst customer service saying that their representatives will have to ask how severe the damage is to the mattress. If the bed is not damaged enough to their estimation, you will have to pay for some service charge to get someone to fix it for you. Also, the return delivery charge falls on the shoulder of the consumer. If you happen to have bought a heavy beds, you will have to spend more on shipping.

I am not an expert in consumer guides but I know for a fact that it is better to choose a reliable company that will not lead you to a merry chase when it comes to its warranty. This is probably why Sealy has been putting the others in the shade for quite some time now. They place the interest of their consumers first above everything else to make certain that they will come back and buy again from them. That is the whole logic of the over-all satisfaction rating. When more consumers are satisfied, more will recommend it and more will keep on coming back.

So in general, you have to test the comfort of the mattress first and get to know more about the reputation of the mattress brand before giving your plastic and have them charge you with thousands of dollars.
